Course Overview
An overview of the laboratory techniques used in the detection and enumeration of important food-related micro-organisms. Topics include basic microbiological safety procedures, aseptic techniques, sample collection techniques, and proper plating methods. Learning Outcomes
Upon successful completion, the student will be able to:
- Operate a light microscope for the visualization of bacteria.
- Carry out successful gram stains of bacteria.
- Demonstrate aseptic technique as it pertains to microbial cultures.
- Successfully carry out a standard plate count of milk.
- Do serial dilutions.
- Properly report microbial counts.
- Collect surface samples for sanitation checks.
- Carry out an MPN and membrane filtration of water for the enumeration of coliforms.
